The content of this resource has been rewritten for the third edition, mainly by new authors. The chapter on processing has been split into two chapters--on production and refining and on modification processes and food uses--and a new chapter has been added, on nonfood uses. Other chapter topics include fatty acid and lipid structure, occurrence and characterization of oils and fats, and lipid metabolism. Each of the 11 chapters present a detailed description of the subject at a level appropriate to researchers and industry chemists, with a list of major references concluding each chapter subsection. Significant to this edition is the expansion of the dictionary section--to 656 pages--with physical, chemical, and structural data on 13,000 lipids and related compounds.
