For years Jacqueline Lagace suffered from debilitating chronic pain due to arthritis in her hands, spine, and knees. She lost much of the use of her hands and also wrestled with pain-induced insomnia. She explains why consuming wheat, animal-source dairy products and animal proteins cooked at high temperatures disrupts the balance of intestinal flora and spurs the growth of pathogenic rather than beneficial bacteria, and cites recent scientific studies showing how and why these foods are potentially pro-inflammatory for persons predisposed to developing chronic inflammatory diseases such as arthritis and fibromyalgia, among others.
