For years Jacqueline Lagace suffered from debilitating chronic pain due to arthritis in her hands, spine, and knees. She lost much of the use of her hands and also wrestled with pain-induced insomnia. Conventional medicine failed to provide any relief, and Lagacé, a medical researcher, began searching for alternatives.

That search brought her to the work of French clinician Dr. Jean Seignalet, an expert in nutrition therapy, who used targeted nutrition to treat some 2,500 patients suffering from chronic inflammatory diseases. His approach was called the hypotoxic diet (also the ancestral diet), and he achieved an 80 percent success rate with it. Using her training as a scientist, she thoroughly investigates the science behind treating inflammatory disease with nutritional therapy and presents a strong case for Dr. Seignalet’s methods. She explains why consuming wheat, animal-source dairy products and animal proteins cooked at high temperatures disrupts the balance of intestinal flora and spurs the growth of pathogenic rather than beneficial bacteria, and cites recent scientific studies showing how and why these foods are potentially pro-inflammatory for persons predisposed to developing chronic inflammatory diseases such as arthritis and fibromyalgia, among others.
