Is serum cholesterol a mediator of disease which is increased by eating saturated fats and decreased by eating unsaturated fats? The authors here are not convinced, and in this fascinating read on what is a controversial subject, the authors present sets of clinical trials with conclusions and contribute their own comments. One consistent comment is that attempting to control serum cholesterol below a certain limit does not appear to relate directly to coronary heart disease, which may be more closely linked to other contributors such as heredity. They examine the standard cholesterol hypotheses and find fault, assert that familial factors are key, note than rates of cancer and other diseases are lower in higher cholesterol groups in the general population, and locate alternatives to the conviction that the less saturated fat you consumer, the better off you will always be.
