This document compiles the principles and methods that the World Health Organization and the Food and Agriculture Organization--both agencies of the United Nations--use to asses the environmental and human health of chemicals put in food. One purpose is to allow scientists to evaluate the evaluation of the agencies; another is to allow scientists to conduct research that can be compared with that of the agencies.
